As far as I’m concerned, the best dishes are often those invented to use leftovers.

The Swedish version of “chop everything and fry it” is called pyttipanna. You simply dice vegetables (potatoes, carrots, onions, parsnips) and fry them with a meat alternative (such as tofu or soy mince). Here in Sweden it’s often served with pickled beetroot, but unfortunately we didn’t have any. I have to try it next time.
