Chickpea Bean Stew



Peel potatoes and cut into 2 cm cubes. Peel and finely chop onion and garlic.

Heat oil in a large pot. Sauté potatoes, onion and garlic in it for about 5 minutes. Add tomatoes, paprika powder, cinnamon and 1 l vegetable broth. Season with salt and pepper. Simmer over medium heat for about 10 minutes.

Meanwhile, peel carrots and cut into thin slices. Add carrots, beans and chickpeas to the pot and continue to simmer for 20-25 minutes.

Crumble feta. Wash cilantro and pluck leaves from stems. Finely chop cilantro leaves. Season with salt and pepper. Serve with sprinkled cilantro and feta on top.
