Mushroom stewNovember 30, 2022
Autumn and winter are stew time aboard TIAMAT. 🍂🍁❄️
We’ve found this recipe lately and adapted it to our liking.
- 1 large onion in pieces
- 3 cloves of garlic
- 2 stalks of celery in small pieces
- 1-3 carrots in small pieces
- 2-3 potatoes in small cubes
- 1 bell pepper
- 300 grams of mushrooms
- 2 tbsp tomato paste
- 250 ml red win
- 750 ml vegetable broth
- 2 tbsp flour
- 4 dried bay leaves
- Pepper and salt
- 1 tbsp Marmite if you like it
Put a large pan on the fire and briefly fry the mushrooms in some oil. Set aside half of it.
Add the onion, garlic, celery and carrot and sauté for a few minutes with the remaining mushrooms.
Sprinkle the flour over it, add the tomato paste and red win. Let it roast a bit.
Add the bay leaf, thyme, vegetable broth. We cooked some noodles together with the stew.
Before serving, put the mushrooms back in the pan.
